The recipe we’re sharing today features 2 cups of cucumber slices, 1 ½ cups of tomato chunks, ½ cup of red onion slices or green onion chunks, 2 tablespoons of mayo, 3 to 4 tablespoons of red wine vinegar, and salt and pepper to taste.

Construct the Salad
First, start by slicing the cucumber into a large bowl, slicing it in either whole rounds or half-moon shapes, depending on the cucumber size.
If the cucumbers are bigger, make sure to remove the watery seeds.
I like using the Persian Green Fingers cucumbers I grow in my garden or you can use English cucumbers as they are firm and don’t have watery seeds.
Next, chop the tomatoes into juicy chunks that will add flavor to the dressing.
For the onions, slice them thinly (red onions) or chop them into big chunks (green onions) – whichever you prefer. If you don’t like onions, you can omit them, but they do add a distinct flavor to the salad.
In a bowl, gently mix the cucumbers, tomatoes, and onions together.
Create the Dressing
In a smaller bowl, combine the 2 tablespoons of mayonnaise and 3 to 4 tablespoons of red wine vinegar. Mix well, and pour over the tomato-cucumber mixture making sure everything is coated.
Finally, add salt and pepper to taste. Mix everything well and let it sit in the fridge for at least two hours to sweat the flavors together.
For me, it is the red wine vinegar rather than white or apple cider vinegar that really makes this salad delicious.
All of the proportions in this recipe can be adjusted to your liking. If you prefer a creamier salad, you can add more mayo. If you like your salad to be tangier, add more vinegar. You can also adjust the amount of salt and pepper to your liking.

- In another small bowl or cup mix together the mayonnaise and red wine vinegar
- Stir into tomato cucumber mixture coating everything well
- Add salt and pepper to taste
- Let sit and sweat in refrigerator for 2 hours to meld and enhance the flavors
- Serve with anything you desire
