In a smaller bowl, combine the 2 tablespoons of mayonnaise and 3 to 4 tablespoons of red wine vinegar. Mix well, and pour over the tomato-cucumber mixture making sure everything is coated.

Ingredients

  • 2 cups Cucumber Slices
  • 1 ½ cups Tomato chunks
  • ½ cup Red Onion slices or Green Onion chunks
  • 2 TBL Mayo
  • 3 to 4 Tbl Red Wine Vinegar
  • Salt and Pepper to taste

Instructions

  1. Use a large enough bowl to allow you to stir ingredients together well
  2. Slice cucumbers into circles or half-moon shapes
  3. Slice tomatoes into bite-sized chunks
  4. Slice red onions or cut green onions into chunks (this makes it easier for those that don't like eating onions they can pick them out)
  5. In another small bowl or cup mix together the mayonnaise and red wine vinegar
  6. Stir into tomato cucumber mixture coating everything well
  7. Add salt and pepper to taste
  8. Let sit and sweat in refrigerator for 2 hours to meld and enhance the flavors
  9. Serve with anything you desire
