Veggie Noodles, a low calorie and tasty alternative to pasta

Have you tried Zoodles?  AKA zucchini noodles. I love them!
I chose the Paderno Tri-Blade Vegetable slicer to have more options than just making veggie noodles.

This is what the Paderno looks like set up and ready to slice.
(the other type blades for different shapes and sizes are stored handily underneath)
veggie noodles makerYou turn the handle and the zucchini is turned into veggie noodles and spirals in no time.
Turn a squash into noodlesYou do get a long core and a little butt end but I just slice them and eat them too.
I blanch the veggie noodles in boiling salted water for 2 minutes and drain.
(To add a bit more flavor I have also blanched them in chicken broth.)

Or I briefly saute’ them in a bit of EVOO or my new fave, Avacado Oil.
Now add whatever sauce you wish.
Tonight I had chicken sauteed in my home made oven roasted marinara (from my summer garden last year).

It is a ‘must have’ to use up all those tomatoes and squash you have overflowing your harvest basket towards the end of the season.

Here is the zucchini noodles all smothered with marinara and chicken goodness with just a dash of Parmesan.

This was very yummy and it resembles pasta enough to assuage my craving for it.
Even my carb lovin’ husband was impressed.
Last time I served it with my homemade Pesto (that too is from last summer)

  5. I’m so glad I ran across your post because a friend gave me one of those spiral noodle makers and I’ve yet to use it. We try to eat low carb most of the time so I will definitely try to zucchini noodles!

  8. I know about needing another way to fix zucchini come Fall. And this one is much more yummy than we anticipated. A happy surprise.

  9. I read a post somewhere that if you soften the carrots by steaming a bit first they do better. I guess their hardness makes them more difficult. I have a zucchini salad recipe that I want to give a whirl but I would not blanch them, just leave them raw.

  10. Pamela- I just bought the same machine and love it. I also did the zucchini pasta. I wanted to use it with carrots but they didn’t work out well. Cucumbers “noodles” were good also!
    Now that I have the little toy I can’t wait to see what ideas I can come up with.

  11. Really! I am envious, my zucchini plants are only about 2 inches tall. We are in the mountains and have a slow start on veggie gardening. Come August and Sept I will have an abundance too. Can’t wait!

  13. There a a couple versions but I linked to the one I use and am enjoying. We made the noodles again last night and my husband commented again on how much he liked them.

  14. I made them again last night with a pesto sauce and my husband raved over how much he loved them. So they are very tasty, and this time I had inadvertently left them in the water too long and got them a little over cooked and he still loved them so I think it is well worth it.

  17. My zucchini are only about 2 inches tall, we are in the mountains and it suddenly turned cool so they are just kind of sitting. I am so envious you are getting them already or nearly. I had seen that with the peeler, it probably works very well but too slow for me. 🙂 I am the impatient sort. Have you tried to grow Trombolina, it is an Italian climbing zucchini that is so GOOD! You will be hooked. Just give it something to climb on and enjoy. It stays firm when you cook it, has a very tender skin and the flavor has an artichoke hint to it. You can get it from Renee’s seeds or from a garden center that carries her seeds.

  18. I would love to try the zucchini noodles now that the’re starting to come in from the garden. Gotta use them up any way I can! I know some of my friends that are on low carb diets have made the “zoodles” using just a vegetable peeler.

  19. There is a smaller version that looks like it will fit in a drawer. I should put a link to that one on the blog post too so folks who do not want another room consuming gadget to clutter up their kitchen. I too have a small kitchen so I had to really think about which one I wanted to purchase. 🙂
