Hello everybody! 

It is that time of year.

Yep, that time of year…..

when we toss our skinny jeans out.

Why do I say that????

Because it is baking season.

When everyone is whipping up the most delicious treats. 

With shorter and darker days of winter our bodies crave more carbs.

Not the good for you complex carbs,

of course,

but the add an inch or two to the thighs,

      melt in your mouth,

                     oh so sinfully delicious type carbs.

So dig out your bulky sweaters and yoga pants cause I am leading the way.

Now that we are all agreed to add to our awesomeness with a few extra pounds to keep us warm thru the winter..

I will share this fabulous recipe.

 

Raspberry Coconut Bars

the Best Raspberry Coconut Bars

Easy to make Raspberry Coconut Bars, simple recipe that is great for a crowd. Not too sweet but delicious for a coffee break or to take to a gathering!

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Ingredients

  • 3/4 Cup Butter
  • 3/4 Cup Brown Sugar
  • 1/4 Cup Granulated Sugar
  • 1 Cup All Purpose Flour
  • 2 Cups Sweetened Coconut
  • 1 1/2 Cups Old Fashioned Oatmeal
  • 3/4 Cup (9 oz) Raspberry Preserves (I use Smuckers All Fruit)

Instructions

    1. Preheat oven to 375 Degrees F. 
    2. Beat butter, brown sugar and granulated sugar together until fluffy.
    3. Add flour, 1 cup coconut and oatmeal; mix together.
    4. Set aside 1 cup of dough.
    5. Press remaining dough evenly over bottom of a 9 x 13 pan.
    6. Spread raspberry preserves over the dough.
    7. Crumble remaining dough over the preserves.
    8. Sprinkle 1 cup of coconut over the dough.

Bake for 25 minutes.

Remove from oven and allow to cool completely.

Cut into squares and serve.
