I have been trying to fit more kale into our diet in ingenious ways.  The flavor of kale is so unassuming that you can slip it in so many things without it really changing the taste of the entire dish.  We are coleslaw fans and I make it many different ways.   Sometimes with a creamy dressing and sometimes not.
This recipe was one of my attempts to add the kale and enjoy some of our favorite flavors to boot.  We love cilantro.  Lime seems to compliment it.  Poblano gives it a pop of flavor with no added heat that kids would turn their nose up at.
Now I have to admit my photos of this did not come out and it was the staging and not the coleslaw.  But that is okay, it is all in my learning curve.  I will not deprive you of this delicious dish just because I am unimaginative in food photography staging.

I should really have put the head of kale in the photo too, maybe had the coleslaw displayed as a side to some other dish rather than just in the clear bowl etc. 
No matter, it still tastes great and next recipe I share I will show you how to use this with it.

Poblano Kale Coleslaw with Cilantro Lime dressing

Poblano Kale Coleslaw with Cilantro Lime dressing

A healthy side dish that includes kale. Great for picnics, tailgating or any ol' time.

Prep Time 15 minutes
Total Time 15 minutes

Ingredients

  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 2 cups shredded kale
  • 1/2 cup sliced Poblano pepper (also known as Pasilla)
  • Dressing
  • 1/4 cup Mayonnaise
  • 2 Tablespoons fresh lime juice (about 1 large lime)
  • 1/2 teaspoon sugar
  • 1/4 cup chopped cilantro

Instructions

  1. Toss green cabbage, red cabbage, kale, and pepper together in large bowl. Mix dressing ingredients in a separate small dish until combined well and toss with cabbage mixture until well coated. You can serve immediately or refrigerate for a few days.

Notes

I am guessing at to servings, it depends on how you use it. I am estimating 1 cup per person if used as a side.


I have been enjoying finding ways to use kale, last week I even put it in our black beans with smoked sausage.  It was great.  How do you use kale?

  1. Thanks, I love kale but my husband is not a fan. Maybe if I worked with some of these recipes I could get it to where it is more palatable to him. I just manage to slip it in with other things so far.

  3. It always makes it easier to eat healthier if you really like the flavor. I have not tried it in any type of sweet yet. Do let me know how you like the cole slaw when you give it a try.

  4. This sounds delicious. We were doing a kale smoothie with blueberries, but we’re not excited about it. We definitely try this as we are crazy about anything cilantro and lime.

  5. I have but I totally botched them and I have not tried them again. I must’ve overcooked them as they turned to powder when you popped them in your mouth. I followed the directions faithfully but something went awry. I shall try again. I am getting ready to plant tons of it in my hoop house, so I am hoping I will have plenty to pick soon. We do tend to get lots of snow in March but they will be safe and warm in the covered garden. I have never grown it before but here’s to trying!

  6. I love kale and my favorite way to eat is is “Kale Chips” have you ever tried them? I do think the coleslaw is a great way to incorporate it.
