Horseradish Mashed Potatoes your family will love.  Mild horseradish flavor with all the potato goodness.

Horesradish Mashed Potatoes are an easy to make side dish and a great way to kick it up a notch.

I created this recipe to go with Simply Delicious Meatloaf  which was a smash hit.

No pun intended…well, maybe it is more of a segue to the recipe for today.
That white fluffy mound of yumminess cozied up to the meatloaf is what this post is about.
I paired the meatloaf with Horseradish Smashed Mashed  potatoes and I have received a handful of requests for how I make them.
Too bad my photos didn’t turn out very well.  I somehow did not get them into focus the way I wanted.

It is as simple as the meatloaf and if you are a lover of horseradish, like me, and my husband (a new convert) they are going to be a new favorite your your house.
Start with some red potatoes (you can use russet but you must peel those and you don’t with red), scrub then clean and make sure no little pebbles are stuck into one.  (my husband asked me to add that as he bit into a small rock when eating and it had to have been embedded in the potato)
Boil them in a sauce pan of salted water.  The time will depend on how large your potatoes are, but cook them till you can slide a knife into one easily.  I typically test the largest one in the pot. You can also cut the potatoes into cubes and the cooking time will be less but I am a lazy cook and the least amount of prep is the path I take.
Now that is the work up to the recipe..in case you had not boiled potatoes before.

Horseradish Smashed Mashed Potatoes

Horseradish Smashed Mashed Potatoes

A zippy rendition of an down home favorite.

Ingredients

  • • 5 or 6 medium boiled potatoes
  • • 1/3 cup butter
  • • 1/3 cup warmed milk (or enough to make the potatoes moist to your liking)
  • • 2 Tbsp Creamy Horseradish (we love Beaver Brand)
  • • salt and pepper to taste

Instructions

  1. Once your potatoes are boiled until they are soft, drain off the water and smash them with a potato masher, you can leave a few lumps or not, that is up to you. Add the rest of the ingredients and stir in thoroughly.
  2. And that is basically it.
